Difference testing: Methods and appropriate use

Résumé

Difference tests are some of the most common methods employed in sensory evaluation of food and beverages. The objective of difference tests is basically to determine whether a difference exists between two products. There are many different types of test, such as the duo-trio test, the triangle test, the same-different test and the A-not A test. These tests, with their strengths and weaknesses, will be presented briefly during the talk. Whatever the test employed, some basic principles must be respected, e.g. sample coding with three digit numbers, and sample presentation in a balanced order. In some instances the tests must be restricted to one sensory modality. In such cases, the other sensory characteristics should be disguised (by using dark glasses, red light, nose clips or by limiting the tasting to orthonasal perception only). Difference tests can also be used to determine the degree of similarity between products, for instance when producers want to change an element of the winemaking without changing the sensory characteristics of the wines. However, it is wrong to assume that no significant difference automatically means that the products are similar. Similarity tests are, more difficult to achieve since they require more power. An example of a triangle test used as a similarity test will therefore be presented. The final part of the presentation will concern the use of replications in difference tests. Replications from a given panelist are unlikely to be independent which is why special methods are needed to deal with this issue in difference tests.
